This was good. A little spicy and very fragrant
I grooved on it more than the kids, but everyone liked it.
Saute one onion with two cloves garlic and two inches of chopped ginger.
add one package of Boulder marinated curry pineapple chicken...cut up
add a few cups of cubed butternut squash (mine were frozen, which made it easy)
in a proportion that feels right to you add these spices
curry powder*ground coriander*ground ginger*cardamom*turmeric*red pepper
and salt and pepper, of course
and let them sizzle on the bottom of the pan for a minute before stirring them in
and then add 1 1/2 cans coconut milk
chop a big bunch of chard up and throw in near the end
Boil pasta or make brown rice and serve!
It would be just as good without the chicken!

And O.M.G. Last night I had a date with a squirrel. He is packed in 'solar salt' down in the basement with three very formidable rooster heads.
